Ice Cream Waffle Sandwiches


1/2 batch of SweetStacks Waffle Mix (1 egg, 3 TBL oil, 2/3 cup milk, 1 cup SweetStacks Waffle mix)
12 oz semi-sweet chocolate chips (or whatever you prefer)
4 TBL half and half (can also substitute with flavored creamer)
1/2 gallon of vanilla ice cream
Toppings: shredded coconut, peanut butter, chocolate sprinkles, mini chocolate chips, chopped peanuts or anything else you want!


Make 1/2 batch of SweetStacks Gourmet Waffle Mix as directed. For Belgium style waffle irons I like to resist from filling the iron all the way with batter in order to make smaller sandwiches but this is totally up to you. Make eight waffles for four ice cream waffle sandwiches. Let waffles cool for about 10 minutes.

Using the double broiler method (pictured above or chocolate can also be microwaved) melt chocolate together along with the half and half. Add more half and half for desired consistency. Chocolate should be smooth. Dip one side of four waffles and add toppings immediately after. (For peanut butter drizzle: heat peanut butter over stove or microwave for 20 sec and stir) Let chocolate and toppings set before trying to assemble sandwiches.
