White Chocolate Chip, Banana & Walnut Pancakes

Ingredients

2 Cups SweetStacks Gourmet Pancake Mix & Waffle Mix

1 1/3 cups Whole Milk

2 Eggs

6 Tbs Vegetable Oil

1/2 cup White Chocolate Chips

1/2 cup Chopped Walnuts

1 Medium Banana (mashed)

Instructions

Separate egg yolks and egg whites into 2 different bowls. In the bowl with the egg yolks, add the SweetStacks pancake mix, milk and vegetable oil and mashed banana. Whisk together to form a thick batter. Beat the egg whites in other bowl until stiff. Fold the egg whites into the batter using a spoon. This should thin out the batter. Add the walnuts and chips and gently stir until just mixed. Pour 1/4 cup of batter onto a buttered grill set at medium heat. When bubbles start to appear on the batter and the edges are slightly cooked, flip the pancakes and cook until lightly browned.

Serve with warmed syrup. For a special treat, warm 1 cup of maple syrup in a small saucepan with 1/4 cup of chopped walnuts and serve over pancakes.

TO STORE: Store leftover pancakes in zip lock bags and store in refrigerator or freezer.
TO REHEAT: Heat pancakes in toaster or oven until crisp.
