2 cups SweetStacks Gourmet Pancake Mix
1 - 1/3 cup Milk
3/4 cup crushed pineapple with juice
3 TBL Vegetable oil
Combine mix, milk, eggs, and vegetable oil in bowl. Whip together which whisk until batter is smooth.
Add crushed pineapple to batter and mix thoroughly.
Spray griddle with non-stick cooking spray. Heat griddle at medium heat.
Pour batter onto griddle.
Cook pancakes for a minute or until golden before flipping to cook other side.
Ensure that the pancakes are fully cooked before removing from grill.
Pancakes are made with 1/4 cup of batter. Makes approximately 12 pancakes.
TO STORE: Store leftover pancakes in zip lock bags and store in refrigerator or freezer.
TO REHEAT: Heat pancakes in toaster until crisp.
