1 cup SweetStacks pancake mix
2/3 cup milk
3 TBSP vegetable oil
2 tablespoons butter
1/2 tsp pure vanilla extract
1/2 tsp pure mint extract
4 drops of green food coloring
3/4 cup mini semisweet chocolate chips, plus more for topping
Whisk together milk, egg, butter, extracts, and food coloring in a small bowl. Add to SweetStacks Gourmet Pancake mix and stir until incorporated. Stir in chocolate chips. Let the batter sit for 10 minutes.
Heat griddle to medium heat until water drops “dance” on contact. Spray griddle with non-stick cooking spray or butter.
Use 1/4 cup batter per pancake. Flip when bubbles start to break on the surface of the pancake. Cook from 1 to 1.5 minutes on each side until fully cooked. Repeat with another pancake. Top pancakes with whipped cream and more chocolate chips. Serve.
Yields about 6 pancakes.
TO STORE: Store leftover gourmet pancakes in zip lock bags and store in refrigerator or freezer.
TO REHEAT: Heat gourmet pancakes in toaster until crisp.
