Coconut Oatmeal Chocolate Chip Gourmet Pancakes


1 1/2 cups coconut milk (vanilla flavored if you can find it)

3/4 cup rolled oats

1 1/2 cups SweetStacks Gourmet Pancake Mix/Waffle mix

2 tablespoons brown sugar

1/4 teaspoon salt
Coconut Oatmeal Chocolate Chip Gourmet Pancakes

3 eggs, lightly beaten

1 tablespoon vanilla extract

1/2 cup chocolate chips

2 tablespoons vegetable oil, for frying the cakes


In a large, microwaveable bowl, combine the oats and coconut milk. Microwave for 2 minutes, stirring after 1 minute. Set aside to cool. Whisk together the pancake mix, salt, and brown sugar. Stir in the eggs, vanilla, and oat/milk mixture. Lastly, fold in the chocolate chips. In a nonstick skillet, heat 1/2 tablespoon of the oil over medium heat. Scooping 1/4 cup at a time, make the pancakes, flipping each after bubbles form on the surface. Serve with syrup, butter, or any topping you choose.
