2 cups SweetStacks Gourmet Pancake Mix
1 - 1/3 cup Milk
6 TBL Vegetable oil
Separate egg yolks and egg whites into 2 different bowls.
Add SweetStacks pancake mix, milk and vegetable oil to the bowl with egg yolks and mix together with whisk or spoon. Batter will be thick.
Beat the egg whites in other bowl until stiff.
Fold stiff egg whites into batter using a spoon. This should thin out the batter.
Heat griddle at medium heat.
Spray griddle with non-stick cooking spray.
Pour batter onto griddle.
Sprinkle shredded coconut on batter of each pancake.
Cook pancakes for a minute or until golden before flipping to cook other side.
Ensure that the pancakes are fully cooked before removing from grill.
Pancakes are made with 1/4 cup of batter. Makes approximately 12 pancakes.
Add more shredded coconut to pancakes if desired. Enjoy with pure maple syrup!
TO STORE: Store leftover pancakes in zip lock bags and store in refrigerator or freezer.
TO REHEAT: Heat pancakes in toaster or oven until crisp.
