2 large eggs
2/3 cup smooth peanut butter
1-1/3 cups milk
2 cups SWEETSTACKS Gourmet Pancake Mix/Waffle Mix
3 cups semi-sweet chocolate morsels (chips)
Beat eggs and peanut butter in a medium mixing bowl until smooth. Add milk and stir well to combine evenly. Place pancake mix in large mixing bowl. Pour liquid mixture over it and stir just until moistened (read: do not over-mix). Heat a large non-stick griddle or similar over medium-high heat. Pour batter by quarter cupfuls onto griddle. Turn when bubbles appear over top of pancakes. Cook until second side is golden. Remove from heat and allow to cool.
Melt chocolate chips in top half of double boiler (over boiling water in bottom half) or in microwave oven. Ready to serve peanut pancakes with chocolate. Dip pancakes in chocolate or pour on pancakes.

TO STORE: Store leftover peanut butter gourmet pancakes in zip lock bags and store in refrigerator or freezer.
