Brown Sugar Bacon Pancakes

Ingredients

1 cup SweetStacks Gourmet Pancake Mix
1 Egg
3 Tablespoons Oil
2/3 cup Milk
4 strips of bacon (1 per pancake)
1/2 cup brown sugar (to start)

Instructions

1. Preheat oven to 400 degrees. (You can also cook bacon on the stove top if you wish)
2. Coat both sides of bacon with brown sugar, shaking off any extra brown sugar.
3. Cook bacon in oven for 15 minutes. (Or by stove top)
4. Once bacon is cooked combine SweetStacks mix, egg, oil and milk for pancakes.
5. Pour batter onto griddle and immediately place one strip of bacon on top.
