Blueberry Puffy Pancakes


- 2 Cups SweetStacks Gourmet Pancake mix

- blueberries

- powdered sugar

- Puffy Pancake Pan (Puffy Pancake pan can be purchased here on our website!)

- knitting needle or skewer


Make gourmet pancake batter using the SweetStacks gourmet pancake mix (use 1 full batch directions).

Heat puffy pancake pan at low heat. Spray the bottom of each puffy pancake with non-stick cooking spray OR put about 1/4 teaspoon of vegetable oil in each cup.

Pour batter into each cup in the puffy pancake pan.

Place 2-3 blueberries in and push into the batter so it is completely covered in each cup.

As soon as the batter gets bubbly around the edge, turn the puffy pancakes quickly with knitting needle or a skewer ..or a fork will work.

Continue cooking and turning the puffy pancakes to ensure the batter is completely cooked and to keep them from burning.

Once completely cooked remove from pan and cool.

Add powdered sugar to top and enjoy!

Makes approximately 10 puffy pancakes when using larger puffy pancake pans. Please adjust recipe for smaller portions.

Variations: Substitute blueberries with any other fruit, i.e. strawberries, bananas, peaches, mango or crushed pineapple (make sure juice is drained). Our favorite is crushed pineapple! YUM!


TO STORE: Store leftover gourmet pancakes in zip lock bags and store in refrigerator or freezer.

TO REHEAT: Heat gourmet pancakes in toaster or oven until crisp.
