Walnut Ginger Drop Scones – Winner in Recipe Contest


Preheat oven to 400.

2 ½ cups SweetStacks Gourmet Pancake Mix

½ cup coarsely chopped walnuts

1 cup cream

½ cup vegetable oil

½ cup pure maple syrup

1 tablespoon fresh ginger, grated with a microplane


Measure Sweetstacks Gourmet Pancake Mix into a large mixing bowl , stir in chopped nuts, and make a well in center. In a large measuring cup, put cream, oil, syrup and fresh grated ginger and mix. Pour liquid mixture into dries and stir just until dough forms.

Drop by heaping ¼ cups of batter an inch apart on a parchment lined baking sheet. Bake until tops are golden and cooked through, about 18-20 minutes. Enjoy with tea and jam.

Makes 12 large or 18 daintier sized biscuits.
