Preheat oven 350 degrees
2 cups SweetStacks Gourmet Pancake Mix
½ cup sugar
½ cup unsweetened cocoa
2 eggs, lightly beaten
1/3 cup oil
1 1/3 cup milk
1 tablespoon plus 1 teaspoon vanilla extract
1 cup semisweet chocolate chips
1 cup Unsalted butter, at room temperature
1 tablespoon light corn syrup
4 cups sifted powdered sugar
1 tablespoon heavy whipping cream
¾ cup creamy peanut butter
1/3 cup chopped honey roasted peanuts
Line a 12 cup muffin pan with paper liners. Set aside.
In a large bowl add the SweetStacks Gourmet Pancake Mix, sugar and cocoa. Whisk to combine. Stir in eggs, oil, milk and 1 teaspoon vanilla until moistened and combined. Fold in ½ cup chocolate chips.
Spoon batter into each prepared muffin cup 2/3 full. Bake 19 to 20 minutes or until a tooth pick inserted in center comes out clean. Cool completely.
In a large bowl cream butter with an electric mixer until light in color about 3 minutes on medium speed. Mix in corn syrup and remaining vanilla. Reduce mixer speed to low and add powdered sugar in batches; add whipping cream; mix until creamy or spreading consistency; adding more cream if needed. Mix in peanut butter. over meat mixture and cheese and remaining 1/4 cup butter over batter.
Using a pastry bag, fitted with a large round tip, pipe frosting over each cupcake. Melt remaining chocolate according to package directions. Drizzle melted chocolate over each frosted cupcake; sprinkle evenly with nuts.
