Ingredients
3/4 cup SweetStacks Gourmet Pancake Mix/Waffle Mix
3/4 cup milk
1/4 cup butter
1/4 cup brown sugar
1 tsp ground cinnamon
1 large apple, peeled, cored, and thinly sliced
2 eggs, lightly beaten
1/8 tsp nutmeg
Caramel sauce:
1 cup granulated sugar
1/4 cup water
1/2 cup heavy cream
Instructions
Preheat oven to 400 degrees F.
In a 12-inch skillet with an oven-safe handle, over medium-low heat, melt butter. Stir in brown sugar and cinnamon; remove from heat. Arrange apple slices in butter mixture, overlapping them slightly. Return skillet to heat; cook over low heat 10 minutes or until apples are tender crisp.
While apples are cooking, whisk together pancake/waffle mix, milk, eggs, and nutmeg in a mixing bowl. Pour batter over cooked apple slices.
Bake about 20 minutes or until golden and slightly puffy.
While pancake is baking, in a heavy medium sauce pan combine granulated sugar and water. Cook over medium heat, stirring to dissolve sugar before mixture boils. Boil syrup until golden in color, about 5 minutes. Immediately remove from heat and whisk in cream.
Serve baked apple pancake hot with caramel sauce.
