Apple Streusel Breakfast Loaf – 2ND Place Winner in Recipe Contest

Ingredients

Heat oven to 350 degrees. Grease and flour a 9 X 3 loaf pan.

BATTER:

1-1/2 cups Sweetstacks Gourmet Pancake Mix

1/2 cup butter

1 cup sugar

2 eggs

2 teaspoons vanilla

2 teaspoons fresh lemon juice

1/2 cup sour cream

1/2 teaspoon baking soda

2 Granny Smith apples, peeled, finely chopped

STREUSEL:

1/2 cup Sweetstacks Gourmet Pancake Mix

1/2 teaspoon cinnamon

1/4 cup brown sugar

2 tablespoons sugar

3 tablespoons butter

Instructions

For the batter: In a large mixing bowl beat butter and 1 cup sugar until fluffy. Add eggs and vanilla and beat until creamy. Stir in lemon juice and sour cream until blended. In a medium bowl mix 1-1/2 cups Sweetstacks Gourmet Pancake Mix and baking soda until blended. Add these dry ingredients to the butter mixture and mix just until blended. Stir in the apples. Spoon batter into prepared pan and smooth out the top.

To make streusel: combine all streusel ingredients in a medium bowl until crumbly. Sprinkle streusel over batter. Bake loaf in a 350 degrees oven 50-60 minutes, or until loaf tests done. Remove to rack to cool slightly. Serve warm.

Serves 8-10.
