GRANOLA GOURMET PANCAKES
2 Cups SweetStacks Pancake Mix/Waffle Mix
1/4 Cup Instant Oatmeal
1/2 Teaspoon Ground Cinnamon
1-1/2 Cups Milk
6 Tablespoons Vegetable Oil
1/2 Teaspoon Pure Vanilla Extract
3 Tablespoons Honey
1/4 Cup Dried Cranberries
1/4 Cup Chopped Pecans
Combine SweetStacks Pancake Mix, oatmeal and cinnamon in a medium bowl until well combined. Add milk, eggs, vegetable oil, vanilla and honey and whisk until blended. Fold in cranberries and pecans.
Pour by 1/4 cup batter onto hot griddle. Cook one minute and flip to cook an additional 1 minute or until golden brown.
Serve with pure maple syrup or additional honey.
Makes: 14-16 Pancakes
