PIZZA PANCAKE PUFFS
2 cups SweetStacks Pancake Mix
1 teaspoon Italian seasoning
olive oil
14 small cubes mozzarella cheese
1 cup warm pizza sauce
fresh basil
Heat oven 200F.
Make the pancake batter as directed on the package mixing in the Italian seasoning.
Heat a 7 well puffy pancake pan over medium heat brushing each well with olive oil.
When the pan is hot add 1 tablespoon of batter to each well.
Immediately place 1 cube of cheese in center of each pancake and top with another tablespoon of batter. Cook 3 to 4 minutes or until the edges look lightly brown and crisp.
Turn pancakes using two wooden skewers or chopsticks and cook until lightly browned on other side. Transfer pancakes to a platter and keep warm in oven. Repeat with remaining batter.
Serve with sauce. Garnish with fresh basil.
Makes 14 to 21 pancake puffs.
